Welcome to Cookie Week here in Stephanie's Kitchen! I have been hard at work in the kitchen all week trying to come up with the BEST cookies for you all! I am a cookie lover at heart. I've been making cookies for as long as I can remember. I love to make them and I love to eat them. I thought it would be so much fun to devote an entire week to the cookie! And along with that, I wanted to do a cookbook giveaway to show my appreciation of all who support my blog. I have enjoyed starting this blog and trying to keep up with it for the last 6 months. I have discovered my passion of baking through it all, and I've been having so much fun being in the kitchen! I have made so many friends along the way.
So, the first order of business is the giveaway. I have 2 cookbooks, both of which are devoted to the cookie. First, is Martha Stewart's Cookies Cookbook (one of my all time favorites).

The second one is a darling cookbook called Cookies Galore by Jacqueline Bellefontaine.
Both are great cookie cookbooks with fabulous recipes and ideas! So all you need to do is leave a comment on this post and tell me what your all time favorite cookie is. That's it! The deadline is Thursday, July 3rd, 2008 at Midnight. I will announce the winners Friday morning. Tell your friends and other foodie friends and I would greatly appreciate it! My all time favorite cookie is the classic Chocolate Chip Cookie. Crispy on the outside and ooey gooey in the center, hot and fresh out of the oven. Total comfort food for me.

My all time favorite cookie is the classic Chocolate Chip Cookie. Crispy on the outside and ooey gooey in the center, hot and fresh out of the oven. Total comfort food for me. Next order of business, Cookies - Day 1! I am definitely showing you this one first because it is my new favorite. Oh. My. If you like mint and chocolate, you are going to love this one. Total bliss. I found a recipe in Martha Stewart's Cookie cookbook called Chocolate Mint Sandwich Cookies. The link is to her website where she has posted the recipe. I decided to change it up a bit and make it my own. I used her basic cookie recipe, but changed the filling and chocolate coating. This cookie is total heaven let me tell you! It has the same components as a chocolate covered mint oreo cookie, but when you make it from scratch, it just taste sooo much better! It really wasn't all that difficult either. The dough takes no time at all, and after you chill it for an hour, all you have to do is bake, frost and dip. It's worth any time it does take, I promise! I had a 1 1/2 inch flowered shaped cookie cutter that I used, and it was the perfect size. A two bite cookie is perfect when it is as rich as these are. But trust me when I say that you can't eat just one! Instead of a chocolate ganache, which I thought might be a bit to rich for my taste, I used a basic mint frosting and coated the tops of the cookies with a mixture of semi sweet and white chocolate. Perfection in a cookie! I hope you enjoy it as much as I did!
Be sure to check back each day for a new recipe and don't forget to enter the fabulous giveaway!
Chocolate Mint Sandwich Cookies
cookie dough adapted from here
For the cookies:
1 cup unsweetened Dutch-process cocoa powder
1/2 cup plus 2 tablespoons all-purpose flour
1/2 cup unsalted butter, room temperature
1/2 cup granulated sugar
1 large egg
Confectioners' sugar, for work surface
For the mint frosting:
2 cups confectioners' sugar
2 teaspoons mint extract
5 tablespoons heavy whipping cream (use milk if you prefer)
For the glaze:
4 ounces best-quality semi-sweet chocolate, very finely chopped
2 ounces best-quality white chocolate, very finely chopped
1. In a mixer, beat the butter and sugar until light and fluffy, about 3 minutes. Add the egg and mix until well combined. In a separate bowl, whisk together the flour and cocoa. Add slowly to the butter mixture just until combined. Divide in half and make a disk. Wrap with plastic wrap and refrigerate about 1 hour.
2. On a work surface covered lightly with confectioners' sugar, roll out dough to 1/4 inch thickness. Using a 2 inch cookie cutter (I used 1 1/2 inch) cut out dough and place 1/2 inch apart on cookie sheets lined with parchment paper.
3. Bake in a 350 degree oven for about 10-12 minutes. Let cool completely on wire racks.
4. Meanwhile, make the frosting. In a mixer, beat the confectioners' sugar, extract and cream until light and fluffy. Frost one cookie and place another cookie on top. Repeat with remaining cookies.
5. In the microwave or double broiler, melt the semi-sweet and white chocolate until smooth. Let cool slightly.
6. Dip one side of the cookie sandwich into the melted chocolate and place chocolate side up onto the wire rack. Repeat with remaining cookies. Place in refrigerator until chocolate is set. Enjoy!!

These cookies look delicious! and seem very easy too. I will definitely try them out soon!
As for my favourite cookie... I would have to say Oatmeal chocolate chip because you can eat them any time, as many as you like and never get sick of them! Of course they're the chewy kind not those awful crispy, break-your-teeth oatmeal cookies.
PS Cool blog!
Stephanie - those cookies are right up my alley! I've got the Martha Stewart book, so I will have to give those a try sometime soon.
My favorite cookie is a Martha recipe - it's almond thumbprint cookies (might be the wrong name). I'm usually a chocoholic, but these cookies are truly addictive and I can't eat just one or two... I have to put them in the freezer to get them out of my sight!
Yum! cookies are a complete weakness for me. Especially cookie dough. Once I went on a "diet" that said "NOTHING is off limits. Have your favorite foods around and soon they will not be a temptation for you." So I made 4 batches of cookie dough and put them in the freezer for me to eat freely while I lost the desire for cookie dough. It completely backfired. I ate them ALL! Yeah it took a few days, but my desire for cookie dough only increased. I threw away that diet book.
Those cookies look Heavenly!
I think my favorite cookie lately is the homemade oreo!
So excited about cookie week - i love all your recipes and looking forward to more
Thanks
Oh, this is a hard thing to decide.I would say it's a toss up between chocolate chip and frosted sugar cookies. I can't wait to see your other cookie recipes.
Yum those cookies look delicious!! I'd have to say I'm a simple girl and my all time favorite cookie ever are my Grandmothers Tea Sugar Cookies, So yummy!
I hear ya, amyr! I've done exactly the same thing. The cookie I most want to "lose my temptation for" is called various things. I was raised calling it the Wacky Cookie. Some call it Unbaked Oatmeal Cookies. It's the chocolate/peanut butter/oatmeal sugarfest that you cook for just a minute and drop onto waxed paper. Just thinking about it gives me a sugar rush!
My all time favorite cookie is the Brown sugar cookie. It's a nice, simple, rich tasting cooking.
My favorite cookie of all time...drum roll please...Nestle Tollhouse! Yep, the recipe that comes right on the back of the semi-sweet chips. Although I've put my own little twist on the recipe over the years: substitute some (like half) of the butter for shortening, add a spoon full or more of extra flour, use butterscotch, white chocolate and semi-sweet chocolate chips!
You can't go wrong...
Around holidays, I love Chocolate Chip Oatmeal Pecan cookies, this recipe we used to pass around in college to attract guys. I must say I think it worked because I did make these for my husband.
What a fun givaway Steph, and those cookies look to die for! I would have to say my favorite cookie is the chocolate chip cookie from Paradise Bakery. I wish I could make them that good at my house! Look forward to your cookie week~!
My favorite is the recently discovered oatmeal with chocolate and cinnamon chips cookies! They are amazing.
YUM! My favorite cookie is the sugar cookie at Paradise Bakery. The thought of it makes my mouth water!
I love the recipe for a regular old chocolate chip cookie that is on the back of the vanilla box! So good! But it looks like I'm going to have a new fave! Those cookies you made look so yummy!
My favorite cookie is one my mom makes that I have never had anywhere else. It is called a ranger cookie, and it has chocolate chips, oatmeal, cornflakes, coconut...sounds weird, but when they are warm and gooey...they are the best.
I think my favorite cookie might be gingersnaps. Especially during Christmastime, they are just a necessity for me.
We have the same taste in cookies, I love a nice warm gooey chocolate chip cookie too!
These cookies look pretty yummy too though!
Hello. I am a friend of Chante. It's early where I live but that pic makes me want cookies for breakfast :) Mmm.... my favorite cookie of all time? I'd have to say a warm chewy choc. chip cookie. :) My favorite to make is a cake cookie (any kind) cuz they are so easy.
Fun giveaway, Steph! Those cookies look absolutely fabulous. Mint and chocolate are one of my favorite combinations.
My all-time favorite cookie is oatmeal chocolate chip. Hearty and sweet and perfect.
Mmmm my all time favorite has to be white chocolate macadamia nut!
The chocolate mint cookies look AMAZING! Mint is my favorite and I am always looking for a new recipe featuring it.
As for my favorite cookie, it would probably have to be snickerdoodles or white chocolate cranberry oatmeal cookies. I can't decide, but I've never met a cookie I didn't like =)
Definitely soft sugar cookies with a good frosting. I'm a big fan of Lofthouse but I have a good recipe as well.
Steph, this is wonderful! you are far too generous, my friend!
These cookies look so yummy! I love the icing on top.
My favorite cookies are lemon cookies.
Cory & Katherine, my grandma makes ranger cookies too, they are awesome! But my favorite cookie right now is the Lemonade from the Girl Scouts. My local troup didn't sell them this year, so some friends from Iowa shipped them to Missouri for me. The best cookies ever!
These look soo yummy! I'll have to give these a try for sure!
I'd have to say my favorite cookie is a good ol' soft chocolate chip cookie! Can't beat them with a cold glass of milk!
Thos look delicious! My favorite cookie is just the simple soft chocolate chip- I love the classics!
I love your blog, and I love cookies. My favorite all-time cookie is chocolate chip, but the one I make the most is a simple cinnamon bar. I especially love the little squares right out of the freezer.
Oh those look so good. My favorite cookie would have to be a soft homemade oatmeal chocolate chip cookie.
Best cookie I ever had.... green tea cookies with almond, in Japan.
one of my favorite cookies, love the mint filling!
Those cookies look so good! I still think a warm chocolate chip cookie would beat it though.
Those books look fun, and would be a perfect way to introduce the art of baking cookies with my daughter.
My favorite cookie is a big, fat soft oatmeal raisin cookie. If I tried these mint cookies, I might change my mind! They look so delicious.
My favourite cookie would be Dorie Greenspan's Chocolate malted whopper...delish! Yours looks like it could be a close second though.
Wow-these cookies look really great. I have to say that my favorite cookie is the Snickerdoodle. A simple sugar cookie, the addition of a cinnamon and sugar coating really takes it to the next level. I remember that being the first cookie I ever made, somewhere around the age of four, standing on a kitchen chair pushed up to the counter and rolling the dough in the sugar mixture as my grandmother looked on.
First off, I love your blog, but sorry I'm a bit of a "shy commenter" :) I've used quite a few of your recipes and they are great! These cookies look amazing. Seriously, how can you go wrong with mint and chocolate? Yum! But I would have to say my favorite is a perfect chocolate chip, and I say perfect because I've had a few that are not! Haha
Amazing. Everything you make is so perfect. I hope to make that gooey chocolate cake of yours this week. But these cookies, Stephanie, are just amazing. Nicely done.
My favourite cookie is Dorie Greenspans Chocolate malted whopper cookie...delish!
I think my favorite cookie is a white chocolate macadamia nut cookie. Yummy!
I love your blog! Your recipes are great and are the kind that my family likes to eat. Your pictures make me want to take a bite of whatever you've made.
I absolutely LOVE your site. It's been wonderful. Not one recipe I have tied have I been disappointed with.
My favorite cookie of all time is the "Blue Ribbon Chocolate Chip Cookie" from Mrs. Fields. I add walnuts and make it with vanilla sugar. It is divine!!
I can't wait to try the Chocolate covered Mint Cookies. One of my favorite combinations.
Blessings,
Mary
Mint and chocolate? How could you go wrong with that one!? My favorite kind of cookie are these jell-o cookies my grandma made every year for Christmas, in red and gree of course!
I'm so excited for cookie week! And what a great way to start it off!!
I would have to agree with you - if I had to choose one favorite cookie, it would be chocolate chip. You can never go wrong with a good chocolate chip cookie!
My favorite cookies have got to be good old chocolate chip with pecans.
I've made the brownie recipe in MS's cookie book--someone had it on their blog and I couldn't resist. It is my all time favorite brownie recipe now!
Nice giveaway. :)
Those look really good and I love chocolate mint.
My favorite cookie is a recipe from my Grandma (who passed many years ago). Our family calls them "Headache Cookies" because my grandma always had some in her freezer and could pull them out and defrost them in a jiffy. My cousin was over and came in and said he had a headache. My grandma got him a cookie and told him to sit down and enjoy it. He ate the cookie and was feeling better and went back outside. Later he came in and wanted to know if there were any more of those "headache cookies". The name stuck and they are a family tradition. They are a basic pastry dough and you spread with jam (I love raspberry) and shredded apples, cinnamon and sugar and some currants. Roll up, score and bake then cut apart. Kind of like a strudel, but a bit more cookie like due to the dough used.
Lisa
Tough choice on my all time favorite- but I would have to go with the sugar cookies with buttercream frosting. Can't go wrong.
I just made these cookies but with a chocolate mint filling. Oatmeal raisin all the way. Soft, chewy, and can pass for slightly healthy with the oats and raisins and everything.
beautiful! my favorite cookie (of the moment) are buttermilk cookies with lemon zest...yum. and martha's cakey chocolate chip cookies. apparently i just like cakey cookies--probably because they bridge the cookie-cake gap.
MMMM, those cookies look amazing. I have to admit it is very difficult to pick a favorite cookie because I love so many, but the best always seem to be the ones my son and I cook together
Wow, nice cookie to start the week off with! Let's see, I think it would have to be Lexis's Favorite Chocolate Cookie from the Martha Stewart Cookbook. Yum!
My favorite cookie is chocolate oatmeal -- the chocolate puts raisins to shame!
I must admit that chocolate chip cookies with pecans are my favorite cookies! So common but so good!!!! Yum!! I would love to win and make cookies all day!
I will pretty much eat, and pretty much love any cookie that I can get my hands on. I would have to say that my top favorites though are oatmeal chocolate chip and snickerdoodle!!
I have really enjoyed reading your blog and have tried many of your recipes! Thanks for always sharing!

If only every week could be filled with cookies. Chocolate sandwich cookies with mint frosting and chocolate glaze...mmm...
Holy Cow those look amazing, my 2 favorites-chocolate and mint!
My favorite cookie is definitely chocolate chip but right next to it is coconut macaroons, dipped in dark chocolate of course. Cook's Illustrated has my favorite recipe.
I'd have to say my favorite are from a local restaurant where they make a chocolate chocolate chip meringue filled with coconut. Its to die for....
zekks at yahoo dot com
Classic chocolate chip will always be my fave as well...but I do also have a weakness for snicker doodles!
I've only started baking about a year ago. Before homemade cookies, I thought chips ahoy were the greatest invention in the world of baked goods... Homemade cookies, wow, what an eye opener. My favorite to make has been the soft chocolate chip cookies. I don't care what people say, I love my cookies full of chocolate chunks, the more the better...
Snickerdoodles! I could eat them until I get sick. The cinnamon-sugar combination is the best!
It's hard to pick one, but I'll guess I'll go with oatmeal cookies with dried cranberries. With a little orange zest in the batter, they are just amazing!
The mint cookies will be perfect for a baby shower theme I am working on. I am so excited!
My favorite cookie is double chocolate walnut biscotti.
I must try those cookies!!
My fav is homemade oreo cookies...YUMMY!
Those cookies look so yummy! I love all kinds of cookies but I guess my favorites are Peanut Butter Blossoms.
I love me a good chocolate fudgy cookie with white chocolate chips and macadamia nuts, it's just a great combination! Cookie Week will be a most excellent celebration, I'm sure of it - and thanks for the entry to the giveaway, too!
I love reading your blog and trying new recipes when I have the chance. Thanks for sharing!!
Plain old chocolate chip. Ghiradelli has my favorite recipe on the bag.
Oh those cookies look heavenly! I was tempted to lick my screen. I can't pick one favorite cookie because it's a tie: classic oreos and oatmeal chocolate chip, yum on the tum!
Great site! I found it on the Food Gawker. I really like Rolo Cookies-- chocolate cookie wrapped around a Rolo. My sister makes them every Christmas. I can't wait to try these mint Oreos. Minty chocolate is one of my favorite combinations. Thanks for the recipe.
I love this blog! Those cookies look too good to be true!! I have to try them!
My very favorite cookie is Cranberry & Hazelnut with milk chocolate from Ben's Cookies in Salt Lake. I would LOVE to get my hands on that recipe! TO DIE FOR!
Before I discovered those, however, it was a toss-up between Toll House and Oatmeal Raisin (Quaker's "Vanishing Oatmeal Raisin Cookies" recipe).
Those look great!
My favorites are what my family calls the Christmas cookie sandwich. It's just 2 butter spritz cookies that are sandwiches together with a chocolate filling. They perfectly compliment each other.
I have the Cookies Galore cookbook and it is fabulous! I love the Valentine's Day heart cookies that get dipped in chocolate in there. Delicious! I've used that recipe for so many other things!
As for my favourite cookie of all time, though I am a diehard chocaholic and cannot resist chocolate chip cookies fresh from the oven, my favourite cookie is my grandmother's shortbread cookies. They're little and delicious with a little nuttiness and maple flavour. Mmmmmmmm :)
My favorite cookie is Chocolate Chip
Your cookies look delicious! my favorite cookie has to be snickerdoodles! i can eat those things all day long. :)
all-time favorite cookie? that might be the toughest question ever. i think i'll have to go with oatmeal scotchies. glorious.
My favourite cookie? The one you just made of course! Lol! You know I love cookies so much I actually never thought about my favourite I think it depends on my mood. Those cookies look incredible! I'll have to try them soon. And my favorite cookie... That's a hard one. I feel so unfair leaving out so many good cookies. But when it comes down to it, I guess I'll stick with the classic and say chocolate chip.
These cookies look wonderful! I can't wait to try them.

Favorite cookie? Easy! Thick vanilla sugar cookies with almond glazed icing. And the cinnamon candy sprinkles are a MUST!! OH YUMMM!!

Soft frosted sugar cookies are my favorite. Mmmmm. I can't wait to try this chocoate mint sandwich cookie recipe!
Although it's really hard to only pick one I have to say snickerdoodles are my favorite! Warm from the oven with an ice cold glass of milk......it's pure heaven! Being 3 months pregnant, with raging tastebuds I am now drooling and will probably make some tonight!
these look like they could be my new favorite! chocolate and mint *swoon*
my favorite cookie is hot out of the oven chocolate chip cookies, they take me back to my childhood every time.
These look so good. I must say that I don't have an all-time favorite cookie. I'm still searching. However, I am a big fan of chewy oatmeal w/walnuts, molasses and vanilla wafers.
I am such a cookie junkie. I have no self control when it comes to cookies. So when I make a batch I have to plan on giving some away or I will literally each them for breakfast lunch and dinner. One of my favorites is a basic cookie dough recipe that you would make for any chocolate chip cookie...But instead of chocolate chips I put white chocolate chips, craisins, and dried blueberries. Called Red, White & Blue Cookies. Yum
I love your food blog!!!! i have used many of your recipies and i love them. My all time favorite cookie has to be a classic soft sugar cookie with lots of fosting and sprinkles. you don't want to know how many i could eat in one sitting. love them!!!!
Erin
I love your blog. I just used your pizza dough recipe to maked grilled pizza. My favorite cookie is a homemade oreo! I love the cream in the middle of the them and they are super easy to make.
Oh, my favorite cookie has to be warm shortbread cookies. Flaky, buttery...oh, my mouth is watering. I may need to make some tonight!
Those look so good! I'll definitely have to try them soon! And I'd have to say that my favorite cookie ever...is none other than the classic no-bake cookie. The ones with chocolate, peanut butter and oatmeal that I've made since I was about 7 years old...and of course it doesn't help that I married a man who grew up on them too! Thanks for such a fun give-away...now I just might have to go make some cookies!
My favourite cookie is shortbread (good homemade shortbread, not the cardboardy kind from the grocery store).
Great blog!!!

You're evil ya know. I've been so good, and now you're making me want to bake lots and lots of cookies. Bad Bad girl :-)
I'm with you...I love the orginal chocolate chip cookie! I like mine almost gooey and the softer the better. I love your blog!!
Yum! I love cookies and I really want to win your giveaway! I don't really have a favorite though...there is nothing like homemade chocolate chip cookies straight out of the oven with a glass of milk.
I can't wait to see your cookies this week. Cookies are my weakness! I love every kind of cookie, but if I have to choose- chewy oatmeal chocolate chip/raisin and also chewy ginger snaps- YUM!!
Cookies are my favorite sweet treat. I love the girl scout cookies with the caramel and coconut...so yummy!
I came over from The Picky Palate and your blog looks just as yummy as Jenny's! Who doesn't love cookies - these pictures are making me very hungry!
What fun giveaways!! MY favorite cookie is the classic--a really good buttery chocolate chip cookie. I also love rolo cookies (chocolate cookie with a rolo inside , rolled in a mixture of finely chopped almonds and sugar and drizzled with white chocolate!!) I am really excited about your cookie week--I love cookies!! Your pictures of the cookies so far look amazing!!

I am excited to try all the wonderful recipes you have to offer.
I love the basic chocolate chip cookie.
Yum! I try to bake a batch of cookies a week, and these are definitely going to be made next week. My favorites are Oatmeal Scotch Chippers... they have oatmeal, peanut butter, butterscotch chips, walnuts, and chocolate chips... oh, yum!
Well, my favorite cookie is still the good ol' chewy chocolate chip cookie, although it's rare that I'll turn down any homemade cookie!
I have to be honest, I don't really discriminate against any cookie. I just discovered your blog and can't wait to look around further. My favorite, if I had to choose; would be White Chocolate Macadamia nut cookies.
I love your blog! I find myself being pulled here often from pictures on Tastespotting and FoodGawker.
My favorite cookie is Peanut Butter Chocolate Chip -- they have to be thick and chewy. No thin and crispy cookies for me.
Keep baking!
Tracey
Wow, those cookies look so adorable and yummy! I don't exactly have a favorite cookie, but I really like French macarons with a crispy shell and chewy interior. Are they considered to be cookies?
Thanks for the generous giveaway. I can't wait to see more cookie recipes from you! :D
Double chocolate chip...well, as much chocolate dough/chocolate chunks you can cram into one cookie is good for me :) But it has to be soft, warm, and gooey for it to be my favorite!
And also preferably with a glass of cold milk :)
