Cookie Week is here!!! And a Giveaway!!!


Welcome to Cookie Week here in Stephanie’s Kitchen! I have been hard at work in the kitchen all week trying to come up with the BEST cookies for you all!  I am a cookie lover at heart.  I’ve been making cookies for as long as I can remember.  I love to make them and I love to eat them.  I thought it would be so much fun to devote an entire week to the cookie!  And along with that, I wanted to do a cookbook giveaway to show my appreciation of all who support my blog.  I have enjoyed starting this blog and trying to keep up with it for the last 6 months.  I have discovered my passion of baking through it all, and I’ve been having so much fun being in the kitchen!  I have made so many friends along the way. 

So, the first order of business is the giveaway.  I have 2 cookbooks, both of which are devoted to the cookie. First, is Martha Stewart’s Cookies Cookbook (one of my all time favorites).  

The second one is a darling cookbook called Cookies Galore by Jacqueline Bellefontaine.  
Both are great cookie cookbooks with fabulous recipes and ideas! So all you need to do is leave a comment on this post and tell me what your all time favorite cookie is.  That’s it!  The deadline is Thursday, July 3rd, 2008 at Midnight.  I will announce the winners Friday morning.  Tell your friends and other foodie friends and I would greatly appreciate it!  My all time favorite cookie is the classic Chocolate Chip Cookie.  Crispy on the outside and ooey gooey in the center, hot and fresh out of the oven.  Total comfort food for me. 
Next order of business, Cookies – Day 1!  I am definitely showing you this one first because it is my new favorite.  Oh. My.  If you like mint and chocolate, you are going to love this one. Total bliss.  I found a recipe in Martha Stewart’s Cookie cookbook called Chocolate Mint Sandwich Cookies.  The link is to her website where she has posted the recipe.  I decided to change it up a bit and make it my own.  I used her basic cookie recipe, but changed the filling and chocolate coating.  This cookie is total heaven let me tell you! It has the same components as a chocolate covered mint oreo cookie, but when you make it from scratch, it just taste sooo much better!  It really wasn’t all that difficult either.  The dough takes no time at all, and after you chill it for an hour, all you have to do is bake, frost and dip.  It’s worth any time it does take, I promise!  I had a 1 1/2 inch flowered shaped cookie cutter that I used, and it was the perfect size.  A two bite cookie is perfect when it is as rich as these are.  But trust me when I say that you can’t eat just one! Instead of a chocolate ganache, which I thought might be a bit to rich for my taste, I used a basic mint frosting and coated the tops of the cookies with a mixture of semi sweet and white chocolate.  Perfection in a cookie!  I hope you enjoy it as much as I did!

Chocolate Mint Sandwich Cookies
cookie dough adapted from here
For the cookies:
1 cup unsweetened Dutch-process cocoa powder
1/2 cup plus 2 tablespoons all-purpose flour
1/2 cup unsalted butter, room temperature
1/2 cup granulated sugar
1 large egg
Confectioners’ sugar, for work surface
For the mint frosting:
2 cups confectioners’ sugar
2 teaspoons mint extract
5 tablespoons heavy whipping cream (use milk if you prefer)
For the glaze:
4 ounces best-quality semi-sweet chocolate, very finely chopped
2 ounces best-quality white chocolate, very finely chopped
1. In a mixer, beat the butter and sugar until light and fluffy, about 3 minutes.  Add the egg and mix until well combined.  In a separate bowl, whisk together the flour and cocoa.  Add slowly to the butter mixture just until combined.  Divide in half and make a disk.  Wrap with plastic wrap and refrigerate about 1 hour.  
2. On a work surface covered lightly with confectioners’ sugar, roll out dough to 1/4 inch thickness. Using a 2 inch cookie cutter (I used 1 1/2 inch) cut out dough and place 1/2 inch apart on cookie sheets lined with parchment paper.
3. Bake in a 350 degree oven for about 10-12 minutes.  Let cool completely on wire racks.
4. Meanwhile, make the frosting.  In a mixer, beat the confectioners’ sugar, extract and cream until light and fluffy.  Frost one cookie and place another cookie on top.  Repeat with remaining cookies.
5. In the microwave or double broiler, melt the semi-sweet and white chocolate until smooth. Let cool slightly.
6. Dip one side of the cookie sandwich into the melted chocolate and place chocolate side up onto the wire rack.  Repeat with remaining cookies.  Place in refrigerator until chocolate is set. Enjoy!!

    These cookies look delicious! and seem very easy too. I will definitely try them out soon!
    As for my favourite cookie… I would have to say Oatmeal chocolate chip because you can eat them any time, as many as you like and never get sick of them! Of course they’re the chewy kind not those awful crispy, break-your-teeth oatmeal cookies.

    Stephanie – those cookies are right up my alley! I’ve got the Martha Stewart book, so I will have to give those a try sometime soon.

    My favorite cookie is a Martha recipe – it’s almond thumbprint cookies (might be the wrong name). I’m usually a chocoholic, but these cookies are truly addictive and I can’t eat just one or two… I have to put them in the freezer to get them out of my sight!

    Yum! cookies are a complete weakness for me. Especially cookie dough. Once I went on a “diet” that said “NOTHING is off limits. Have your favorite foods around and soon they will not be a temptation for you.” So I made 4 batches of cookie dough and put them in the freezer for me to eat freely while I lost the desire for cookie dough. It completely backfired. I ate them ALL! Yeah it took a few days, but my desire for cookie dough only increased. I threw away that diet book.

    Oh, this is a hard thing to decide.I would say it’s a toss up between chocolate chip and frosted sugar cookies. I can’t wait to see your other cookie recipes.

    I hear ya, amyr! I’ve done exactly the same thing. The cookie I most want to “lose my temptation for” is called various things. I was raised calling it the Wacky Cookie. Some call it Unbaked Oatmeal Cookies. It’s the chocolate/peanut butter/oatmeal sugarfest that you cook for just a minute and drop onto waxed paper. Just thinking about it gives me a sugar rush!

    My favorite cookie of all time…drum roll please…Nestle Tollhouse! Yep, the recipe that comes right on the back of the semi-sweet chips. Although I’ve put my own little twist on the recipe over the years: substitute some (like half) of the butter for shortening, add a spoon full or more of extra flour, use butterscotch, white chocolate and semi-sweet chocolate chips!

    Around holidays, I love Chocolate Chip Oatmeal Pecan cookies, this recipe we used to pass around in college to attract guys. I must say I think it worked because I did make these for my husband.

    I love the recipe for a regular old chocolate chip cookie that is on the back of the vanilla box! So good! But it looks like I’m going to have a new fave! Those cookies you made look so yummy!

    My favorite cookie is one my mom makes that I have never had anywhere else. It is called a ranger cookie, and it has chocolate chips, oatmeal, cornflakes, coconut…sounds weird, but when they are warm and gooey…they are the best.

    The chocolate mint cookies look AMAZING! Mint is my favorite and I am always looking for a new recipe featuring it.
    As for my favorite cookie, it would probably have to be snickerdoodles or white chocolate cranberry oatmeal cookies. I can’t decide, but I’ve never met a cookie I didn’t like =)

    Cory & Katherine, my grandma makes ranger cookies too, they are awesome! But my favorite cookie right now is the Lemonade from the Girl Scouts. My local troup didn’t sell them this year, so some friends from Iowa shipped them to Missouri for me. The best cookies ever!

    I love your blog, and I love cookies. My favorite all-time cookie is chocolate chip, but the one I make the most is a simple cinnamon bar. I especially love the little squares right out of the freezer.

    Wow-these cookies look really great. I have to say that my favorite cookie is the Snickerdoodle. A simple sugar cookie, the addition of a cinnamon and sugar coating really takes it to the next level. I remember that being the first cookie I ever made, somewhere around the age of four, standing on a kitchen chair pushed up to the counter and rolling the dough in the sugar mixture as my grandmother looked on.

    I absolutely LOVE your site. It’s been wonderful. Not one recipe I have tied have I been disappointed with.
    My favorite cookie of all time is the “Blue Ribbon Chocolate Chip Cookie” from Mrs. Fields. I add walnuts and make it with vanilla sugar. It is divine!!
    I can’t wait to try the Chocolate covered Mint Cookies. One of my favorite combinations.

    I’ve made the brownie recipe in MS’s cookie book–someone had it on their blog and I couldn’t resist. It is my all time favorite brownie recipe now!

    Those look really good and I love chocolate mint.

    My favorite cookie is a recipe from my Grandma (who passed many years ago). Our family calls them “Headache Cookies” because my grandma always had some in her freezer and could pull them out and defrost them in a jiffy. My cousin was over and came in and said he had a headache. My grandma got him a cookie and told him to sit down and enjoy it. He ate the cookie and was feeling better and went back outside. Later he came in and wanted to know if there were any more of those “headache cookies”. The name stuck and they are a family tradition. They are a basic pastry dough and you spread with jam (I love raspberry) and shredded apples, cinnamon and sugar and some currants. Roll up, score and bake then cut apart. Kind of like a strudel, but a bit more cookie like due to the dough used.

    I just made these cookies but with a chocolate mint filling. Oatmeal raisin all the way. Soft, chewy, and can pass for slightly healthy with the oats and raisins and everything.

    Gingerbread! Gingerbread are definitely my all time favourite! With icing they are even better, which is saying something.

    These look fantabulous though. I’m always on the look out for a good new cookie recipe. A girl should always have a bunch of amazing cookie recipes up her sleeve!

    Holy Cow those look amazing, my 2 favorites-chocolate and mint!

    My favorite cookie is definitely chocolate chip but right next to it is coconut macaroons, dipped in dark chocolate of course. Cook’s Illustrated has my favorite recipe.

    I’ve only started baking about a year ago. Before homemade cookies, I thought chips ahoy were the greatest invention in the world of baked goods… Homemade cookies, wow, what an eye opener. My favorite to make has been the soft chocolate chip cookies. I don’t care what people say, I love my cookies full of chocolate chunks, the more the better…

    Great site! I found it on the Food Gawker. I really like Rolo Cookies– chocolate cookie wrapped around a Rolo. My sister makes them every Christmas. I can’t wait to try these mint Oreos. Minty chocolate is one of my favorite combinations. Thanks for the recipe.

    I love this blog! Those cookies look too good to be true!! I have to try them!

    My very favorite cookie is Cranberry & Hazelnut with milk chocolate from Ben’s Cookies in Salt Lake. I would LOVE to get my hands on that recipe! TO DIE FOR!

    Before I discovered those, however, it was a toss-up between Toll House and Oatmeal Raisin (Quaker’s “Vanishing Oatmeal Raisin Cookies” recipe).

    My favorites are what my family calls the Christmas cookie sandwich. It’s just 2 butter spritz cookies that are sandwiches together with a chocolate filling. They perfectly compliment each other.

    I have the Cookies Galore cookbook and it is fabulous! I love the Valentine’s Day heart cookies that get dipped in chocolate in there. Delicious! I’ve used that recipe for so many other things!

    As for my favourite cookie of all time, though I am a diehard chocaholic and cannot resist chocolate chip cookies fresh from the oven, my favourite cookie is my grandmother’s shortbread cookies. They’re little and delicious with a little nuttiness and maple flavour. Mmmmmmmm :)

    Mint chocolate cookies covered in chocolate. Wow does it get any better. Mint and chocolate are almost my number one. But my all time favorite is a plain old cut out sugar cookie! Cant stop eating them. (They must have frosting).

    I am such a cookie junkie. I have no self control when it comes to cookies. So when I make a batch I have to plan on giving some away or I will literally each them for breakfast lunch and dinner. One of my favorites is a basic cookie dough recipe that you would make for any chocolate chip cookie…But instead of chocolate chips I put white chocolate chips, craisins, and dried blueberries. Called Red, White & Blue Cookies. Yum

    Those look so good! I’ll definitely have to try them soon! And I’d have to say that my favorite cookie ever…is none other than the classic no-bake cookie. The ones with chocolate, peanut butter and oatmeal that I’ve made since I was about 7 years old…and of course it doesn’t help that I married a man who grew up on them too!     Those cookies look scrumptious! I hate to sound boring or perhaps even cliche, but theres nothing better than a ccc (chocolate chip cookie for the novices). I have a recipe that makes them perfectly chewy and crispy using ‘Wondra’ flour…you cannot beat them! And a nice Russian (sometimes referred to as Mexican) tea cookie around the holidays with a nice cup of hot tea! Yum city!

    Cookies, mmm, you can make so many variations, that is why it is such a great treat! one day if you feel like adding in oatmeal or m-m’s or candy bars, you can, and it almost always imporoves it.
    However my all time favorite would have to be Peanut Butter Chocoalte Chip cookies (just like regular CC cookies but with peanut butter).
    Now I’m going to have to try these mint ones though, they are making my mouth water :)

    Oh wow, those look delicious! I’ve never made a cookie that gets dipped in chocolate. Oh man, mint and chocolate, yum. As for my favorite cookie…that’s such a terrible thing to ask of me!! How can I choose just one?? Hmm…well, maybe I’d go with a good heath cookie. Or an Anzac (mainly because my Mom makes them). I don’t know!     I would have to say that my all-time favorite is a good old, soft and chewy chocolate chip cookie. I love trying new cookies and I love an enormous variety of different cookies. But when it comes to sheer comfort-food familiarity and deliciousness, for me chocolate chip will trump any cookie out there.

    My husband loves anything with chocolate and mint, so these will be made next week – without question. My favorite cookie to bake is an oatmeal dark chocolate chip cookie. I came up with them by combining several different cookie recipes. And of course, they are cooked just until soft and chewy – not crunchy at all!

    My favorite cookie has to be the candy cane cookies my mom used to make around Christmas. She used peppermint candy in the dough, and divided it in half. Half got red food coloring, which she twisted together with the white into a candy cane shape.

    Actually I have two favorites.”7 layer bars”,grahm crumbs w/ sugar & butter,walnuts, chocolate chips, coconut,sweetened condensed milk. You can not beat these for chewy and just yummy. The other is made at ABC in Napa, California. I believe they are called “lemon dreams” or “lemon clouds” OMG! Delicate with a tart icing. They sort of dissolve on tongue like an angel.

    My favorite cookies are Gingersnaps, but the way my mom made them, replacing the normal dark molasses with pomegranate molasses, adding a little allspice to give them an exotic flavor, and then rolling them in cinnamon and baker’s sugar. I love the spicy and sweet taste all at the same time!

    Mmmm those look like mint Girl Scout cookies…only better! My favorite cookie is Kitchen Sink Cookies…they are oatmeal chocolate chip cookies to which is added diced apricots, dried cranberries, two or three kinds of chopped nuts, golden raisins…basically everything but the kitchen sink. You can also mix in all kinds of chips…dark and milk chocolate, white chocolate, swirls, peanut butter chips…you get the idea. A lot of filling held together with buttery oatmeal cookie dough.
