Whole Wheat Crepes with Strawberries, Nutella and Toasted Almonds

This is my version of fancy food.  I’ve always been a crepe lover, especially since my Mom and I picked them up on the streets of Paris 10 years ago.  They have street vendors that make the most delicious crepes ever.  They are simply covered in nutella and folded over in a little paper and you eat them in about 10 seconds because they are so good.  I’ve been trying to master them ever since.  They are really very simple.  I decided to make a healthier version using whole wheat flour and they were just as tasty.  And how can you go wrong with Nutella anyways? If you’ve never had it, it’s just a simple Chocolate Hazelnut spread that is absolutely divine.  (You can buy it at almost any grocery store.) It goes perfectly with crepes.  I like to add strawberries and toasted almonds for a finishing touch.  Make these for guests and they will be so impressed with you and keep asking for more!

Whole Wheat Crepes
recipe by Stephanie
1/2 cup whole wheat flour
1/2 cup all purpose flour
1/4 teaspoon salt
1 tablespoon granulated sugar
4 eggs
1 tablespoon melted butter
1 1/2 cups milk
1. Place all ingredients in a food processor or blender and blend until smooth.  Scrape down sides as necessary.
2. Cover and refrigerate for at least 30 minutes, (or overnight).
3. Lightly oil a preheated crepe pan, or a small non stick skillet.  Pour a little less than 1/4 cup of batter into the skillet and quickly tilt the pan in a circular motion until batter is spread evenly around the bottom of the skillet. (If you like thinner crepes, use 2 tablespoons of batter. I like mine thicker.)
4. Cook the crepe until bubbly and browned on the bottom (about 30 seconds).  Carefully flip the crepe over using a long spatula.  Cook for another 20 seconds or until bottom is lightly browned.
5. Fill with desired toppings and roll or fold.

    I’m so glad you tried Paradisio. If I had my way we would have have a pizza every day, but we stayed by the Pentagon and that would have been way too far away from most of our sightseeing. Johnny Rockets was great because they were everywhere, and it kind of reminded me of Hires in Salt Lake. And hopefully you enjoyed Potbellies. We did end up eating that about 4 times in the week we stayed, and we loved it. It was like Quiznos, but good.

    Ok, so I totally ate at La Madeleine when I was there! I would have never remembered, but the minute I read the name, I remembered. I loved Georgetown – I stayed in the cutest hotel there.

    And the crepes – yum! My favorite in Paris were the cinnamon sugar, but I’d never turn down nutella and strawberries!

    I love nutella, we use it on so many things for breakfast.

    La Madeline is my fav place to eat at and when we were in OK I hated that they did not have one. I go there weekly and was going insane with out. I went to the one in Georgetown last week yumm. I also like most of the other places you spoke about to, they are all yummy. But 1 & 2 are the best :) ..

    I love the pretty pics. Did you get a chance to try cakelove? They are so good!

    Oh yea I meant to tell you did you try the smores at Cosi. I really do not know if that is something they serve only in the Winter but its AWESOME. You get a fire tray and all to roast your own.

    I love crepes! We call them Norwegian pancakes (because we are Norwegian) but of course they are the same thing! :) What a good idea to make them whole wheat!! I will have to give this recipe a whirl! :)

    Glad you liked DC! I lived there for 5 years until this spring. Georgetown Cupcake is *insane* – it opened sometime this spring and they always seem to have a line out the door, prompting them to shut-down midday to make more cupcakes when they run out. haha

    Being a native of DC, I am so disappointed that you put up so many chain restaurants as your recommended places to go. There are many great, unique and tasty places all over DC (including Georgetown) that are much better than Cosi or Corner Bakery or Unos (really – you liked Unos…have you been to Chicago??). If you come to DC again, please please please try some of our local places. We promise not to disappoint!

    It’s like one mind. I had my first experience with crepes 11 years ago from a street vendor in Paris. :) I personally preferred just the plain ones with butter and sugar, but the Nutella ones were 2nd best.

    Thanks for posting the whole wheat crepe recipe. I definitely want to try it to see how it compares to some I’ve done in the past. I made some whole wheat ones a couple of years ago for a brunch at my mother’s house (just used a regular savory crepe recipe and subbed WW flour). I filled it with ham and asparagus and topped it with a gruyere cheese sauce. YUM!
