Daring Bakers Challenge – October

This months challenge was brought to us by Rosa from Rosa’s Yummy Yums. Rosa decided to give us a nice change of sweet pace and had us all make Pizza! I was so excited for this challenge. It was so nice to try something different. Our challenge was to make pizza like the pros. Which meant a little tossing action. I wasn’t so good at that action, but I tried anyway. We were supposed to catch that in a photo, but since I only had my 3 1/2 year old and my 1 1/2 year old around, I didn’t exactly think I could trust them with my very expensive camera. Yes, I got my camera back if you were wondering. That is another story for another time. Anyways, trust me that I did try it out. But I think I’m just a rolling pin kind of girl. It was still a delicious recipe.
We had to make 2 different kinds of pizza, using sauce and toppings of choice. I decided on a savory and sweet, of course. My savory was delish, but let me tell you a little about my sweet. Oh. My. Despite the fact that I almost burnt it to smithereens, it was the best tasting sweet piece of heaven I have ever experienced in my life. Sounds like I’m exaggerating, right? I’m not. Picture this. A nice thin sweet dough brushed with melted butter and topped with sauteed apples smothered in cinnamon, brown sugar and butter. Top that with a brown sugar, cinnamon crumble and top that with a sweet glaze. I know that words to not give this even remotely justice, but let me tell you that it was absolutely delicious. Mouthwatering delicious. I will definitely be making this again and again. My photo’s do not give it justice either, but if you are in the mood for a sweet treat, give this one a try. You won’t be disappointed. My savory pizza was topped with a white sauce and than topped with a 6 Italian Cheese blend. I added tomatoes and Italian sausage to make it over the top tasty. And it was. Apple Pie Pizza
pizza crust
¼ cup brown sugar
1 teaspoon cinnamon
1 tablespoon lemon juice
2 apples, chopped
2 tablespoons butter
1. In a skillet, saute apples with the brown sugar, cinnamon, lemon juice and butter until soft, about 10 minutes. Brush some melted butter over the crust. Pour apples evenly over the pizza crust. In a small bowl add ¼ cup brown sugar, 2 tablespoons all purpose flour, ½ teaspoon cinnamon and 1 tablespoon melted butter and mix until all is combined. Crumble over the pizza. Bake at 400 degrees for about 10-15 minutes or until crust is lightly golden. In a small bowl add confectioners sugar and a dash of milk. Stir until smooth. Drizzle over the pizza.

These cookies are probably one of my favorites so far. Oatmeal Chocolate Chip M&M Cookies. Yes, they sound so simple, but these cookies are extraordinary. They are delicious. My husband had been requesting them for months, and I finally got around to making them and now I want to make them every week. That’s how good they are. Oatmeal Chocolate Chip M&M Cookies
2 ½ cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
1 cup granulated sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 ½ cups oatmeal
1 cup semi sweet chocolate chips
1 cup m&m’s
1. Whisk together the flour, baking powder, baking soda and salt. Set aside.
2. Cream together the butter and sugars. Add eggs, one at a time until mixed through. Add vanilla. Slowly add dry ingredients until well combined.
3. Stir in oatmeal, chocolate chips and m&m’s.
4. Bake at 375 degrees for about 10-12 minutes, or until lightly golden brown. Do not overbake.

Happy Thursday everyone! And a happy 100th post to me! I can’t believe it myself, but I am officially not a newbie foodie anymore. I’ve made it past the hump and now I’m an experienced blogger(chuckle). I don’t know how experienced I feel quite yet, but maybe eventually it will come to that. I’m still feeling a little out of sorts here lately but I hope to be getting back into the swing of things soon. In honor of my 100th post I am doing a giveaway! Yay! Now onto the recipe!! These muffins are so delicious and moist and tasty that you can’t eat just one. They are filled with fall spices and topped with a brown sugar cinnamon crumble and drizzled with a cinnamon cream cheese glaze. You just can’t beat that combination my friends. And I can only tell you that the aroma of your home while these are baking should be bottled up and made into a candle because it is delightful. I hope you enjoy them and have a great weekend! Pumpkin Spice Muffins

makes 12 muffins
For the muffins:
3 cups all purpose flour
1 1/2 tablespoons baking powder
1/2 teaspoon salt
1/2 teaspoon pumpkin pie spice
1 teaspoon ground cinnamon
1/2 cup butter, melted
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1/4 cup milk
1/4 cup heavy cream
1 cup pureed pumpkin
For the Crumble:
1/4 cup brown sugar
2 tablespoons all purpose flour
1/2 teaspoon cinnamon
1 tablespoons melted butter
For the glaze:
1 cup confectioners’ sugar
2 ounces softened cream cheese
dash of ground cinnamon
dash of milk, if needed
1. Preheat oven to 350 degrees. Spray regular muffin in with non stick spray.
2. Whisk together the flour, baking powder, salt, cinnamon, and pumpkin pie spice. Set aside.
3. Using a mixer, mix the butter and sugars until creamy. Add eggs and vanilla and mix until combined. Alternate adding the dry ingredients and the milk and cream. Add pumpkin puree. Do not overmix.
4. Divide batter evenly between the muffin tins, filling to the very top and a little over.
5. In a small bowl, mix together the ingredients for the crumble. Crumble on top of each muffin batter. Bake for about 25-30 minutes or until cooked through and lightly browned. Transfer to a wire rack to cool slightly.
6. In a small bowl, mix together the ingredients for the glaze. Drizzle over the tops of the muffins.

Simply Applesauce
Were you wondering where I’ve been? Well, I’ve been here. I’ve made some pretty delicious treats too, but no photo’s. As soon as I get my camera back, I will make them again and you will definitely see them right here. But until then, here is something you don’t want to miss out on. Homemade Applesauce. I had never even thought of making applesauce from scratch. But when my Mom had an over abundance of fresh apples picked right off the tree, she quickly started making batch after batch of homemade applesauce. I was lucky enough to have been right by her side and she taught me a thing or two about it. And when I took my first taste, I had never tasted anything so delicious. I will never buy store bought applesauce again. There is no comparison. And the only hard part if peeling the apples. Luckily, I have a Pampered Chef apple peeler/corer/slicer. It is a life saver for sure. So when life hands you apples, make applesauce!
Mom’s Homemade Applesauce
6 cups peeled,cored and sliced apples
3/4 cups granulated sugar
1/4 cup fresh lemon juice
1. Place sliced apples in a large soup pot. Add the sugar and lemon juice and mix well to coat the apples. Cover.
2. Cook on medium heat for about an hour, or until apples are soft and well cooked.
3. Depending on how you like your applesauce, (I like mine chunky), use a potato masher and mash the apples to the desired consistency. (You can also use a food processor to get a more smooth consistency.)
4. Place in freezer bags and take out and move to refrigerator as necessary. (Mom’s trick to keep it fresh)
