It’s been a while my friends! My house has had plague after plague in the last 3 weeks and it seems to still be going strong. It started with the kids and spread to my husband and I. I’ve gone from a Cold to Pink eye to a Sinus infection. It’s been fun let me tell you. But I couldn’t stay away any longer. It’s been way too long since I shared a recipe! So here I am in my PJ’s and kleenex in hand typing away between coughing and sneezes.
I just had to share this delicious salad with you. I had it at a church function a few weeks ago and I’ve made it many times since. I’m not usually a ‘sweet’ salad kind of girl. I love my ranch dressing, but this salad is amazing. Did I mention how amazing this salad is? Well, I’m not lying. And it’s easy too. I dressed it up a bit adding some shredded rotisserie chicken so I could eat it for lunch and feel full and satisfied. Delicious! You have to try it, because if you’ve never had it, you have been missing out on something truly special!
Here’s what you need:
fresh spinach leaves
fresh romaine leaves
fresh strawberries, cut up
a granny smith apple, cut up
mandarin oranges
dried cranberries
toasted almonds
a bit of shredded rotisserie chicken
poppyseed dressing (I like Briannas brand)
Just mix it all together and you’ve got one fantastic salad! Hope you guys enjoy it and have a wonderful week!

Hi Stephanie!!! I agree with you that this salad is GREAT! I’ve been making the same salad for a few years. I got the idea off of a recipe that called for poppy seed dressing, romaine lettuce, cut up chicken, mandrine oranges, and Chineese Noodles. The way I make it is with the all same ingredients as you used, (though I rarley put chicken in) but I also add red grapes cut in half, and kiwi sliced, then cut in fourths. (When I make it without the chicken, I don’t add the Chineese Noodles, I only use the almonds.) I also agree with you that Briannas brand is the best tasting poppy seed dressing!

I want to tell you that I love your site. I found it, well, I don’t remember how. I’m just glad I did. Then my computer died and I lost all my bookmarks. When I began the task of trying to re-bookmark my favorite sites, I couldn’t remember the name of your site. But somehow I found my way to it again. whew! Thank goodness. Oh by the way the teacher in me says that when you write …”my husband and I,” you should use “me” at the end of the sentence. If you took out the reference to your husband you would never write ..”spread to I” even though it was pink eye. Hehe, I couldn’t resist that one. Please feel better and keep up the good work. I really like this salad!! It has yummie flavours & thet are all combined together! MMMM…
This was so delicous!!! I have a few kids that are anti-fruit eaters. So we turned it into a salad bar. It was really fun and the kids had a great time creating their own personal salad. A little trick we do with our poppy seed dressing is add 2 parts poppy seed dressing to one part blush wine vinaigrette. It give the poppy seed a little zing! They are both the Briannas brand.
I was blog stalking and came across yours website. I am loving it might I add! I have one question though, I tried the chocolate bowls and had a problem. I did everything you said and when it came time to pop them the top half of the balloon came out and the bottom half stuck to the chocolate? HELP!! I think it is a fun idea and they were fun to make but it would be better if we could eat them… Thanks

Thanks for the great recipe. I’m not a good salad maker without someone’s recipe. I couldn’t find Brianna’s poppyseed dressing at the grocery store(lame)so I tried it with 1000 Island. It was nummy. Also, Costco had some sweet glazed chicken niblets on sale so I used those instead of the rotisserie chicken. It was delicious!

My husband calls this relief society food. He doesn’t like fruit in salad. I think it’s SOOOO good!
