
Oh how I’ve missed baking. I think of something that I want and I usually go to the kitchen and bake it. It’s been a hard struggle not to be able to do that! So when my Mom came and stayed with me for a couple of days I took full advantage of her baking ability. These little cuties were her idea. There are just as delicious as they are cute. Strawberries aren’t the only fruit you can cover in chocolate. We attempted covering them in caramel first, but that proved to be impossible. If anyone knows any good tricks, let me know, because they tasted fantastic, but the apples were much too moist to hold the caramel on. It just dripped off onto the wax paper and all that was left was a soggy apple. But the chocolate stayed on perfectly. And the flavor combination was amazing. Give them a try!
Chocolate Covered Apple Bites
You will need:
melon baller
4 inch lollipop sticks
granny smith apples
chocolate of your choice
chopped nuts, nonpareils, sprinkles, toffee bits (optional)
1. With a melon baller, scoop little balls out of the apple. Pat the apple pieces dry. Place a lollipop stick into each apple ball and dip in melted chocolate. Roll apples in nuts, sprinkles, nonpareils or toffee bits, if desired. Place on parchment paper until set.

Wish I knew a trick to help you, but I must say the chocolate looks pretty wonderful!
I love this! They’re mini and covered in chocolate! What if you dipped them in chocolate, then caramel and then chocolate again? Or would that be too much? Hmm.
I saw these on an Iron Chef once, then tried the caramel thing, too, and couldn’t get the caramel to stay on. Even tried putting cornstarch on the apple first and things like that. Didn’t work. But, ooh–chocolate! I’ve heard melted pb chips and butterscotch are good, too! Way to go, Mom! Love that last comment’s idea to do chocolate, then caramel, then chocolate again!
I’m trying not to bake as much (to lose a few pounds), and it kills me not to bake, too!

I too tried the Carmel on the apple bites around halloween but just couldn’t keep it on the apple. I wish I had thought about chocolate back then because these look amazing!
Okay, I saw the title of this post in my reader and immediately came over here to see if you managed to get yours caramel dipped! I attempted the exact same thing last fall (cuz little mini caramel apple pops is brilliant, right?? Great minds think alike, lol) but mine were a complete disaster as well. And I tried a LOT of different methods. It just falls all over the place. Oh well! I’m liking the chocolate solution

I tried to do these with caramel around Halloween, and yes – they are impossible! They look great with chocolate – I didn’t even think of that!
If you just roll out the solid caramel and wrap it around the apple piece it works!!! Don’t melt the caramel. I sell full size apples at craft shows but never thought of mini ones. These will be a hit!!!
Caramel apples dipped in white chocolate then cinnamon and sugar are my husband’s favorite dessert. After failing in our mini caramel apple attempt, we finally peeled and chopped the apples, laid them in a 9 x 13 pan, drizzled them with the caramel and chocolate, sprinkled with cinnamon sugar and warmed in the oven for 10 minutes at 250 or so. It’s not quite the crunchy apple texture but the flavor is still there.

Maybe you already found this out BUT, the way to get the caramel to stick is to first dip the apples in white chocolate (or dark or milk – I use white for variety). Then dip in caramel. Then dip the carameled apple in milk chocolate. The caramel will stick to the white chocolate layer nicely.
