This is one of those recipes that came from just needing to bake. I didn’t know what I wanted to bake, I just knew I had to or I would do something drastic like vacuum or something. No really, I was deciding if I should vacuum my floors or bake cookies. So I went to work. Yum. You can take these cookies to whatever level you want. Throw some Andes Mints in there, or any favorite candy bar for that matter. Throw some nuts or peanut butter chips if that is what you fancy. Be creative or keep it simple like I did. Chocolate and more chocolate.
Death by Chocolate Chocolate Cookies
recipe makes about 3 dozen
2 1/4 cups all purpose flour
1/3 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cups butter, softened
1/2 cup granulated sugar
1 cup brown sugar
1 teaspoon vanilla
1 3.9 oz package instant chocolate pudding mix
2 cups of mix-ins (I used 1 cup of milk chocolate chips and 1 cup of semi-sweet chips)
In a medium bowl, whisk together the flour, cocoa, baking soda and salt. Set aside. Using a mixer, cream the butter and sugars. Add the eggs one at a time until well incorporated. Be sure to scrape the sides of the bowl often. Add the vanilla and pudding mix. Slowly add the dry ingredients just until combined. Stir in your choice of mix-ins. Bake at 350 degrees for about 10-12 minutes. Don’t over bake.
