I made these for our romantic (candle burning) Valentines Dinner (+ 3 kids). They were a hit. Just as a lava cake should be. Crisp and chewy outside and they when you spoon into it, the center pours out a delicious creamy chocolate center. Delicious! These are perfect for any occasion but I like to save them for special occasions. They are ultra rich and decedent. Happy Wednesday!
Chocolate Lava Cakes
makes 6 cakes
8 ounces good quality semisweet chocolate
3/4 cup butter
3 large eggs
3 egg yolks
1 teaspoon vanilla extract
1/2 cup all purpose flour
1 1/2 cups confectioners’ sugar
In a glass bowl, melt the chocolate and butter in the microwave (slowly) and stir until smooth and creamy, set aside. In a medium bowl, whisk together the flour and confectioners’ sugar, set aside. In another small bowl, whisk the eggs and vanilla. Mix together the egg mixture to the chocolate mixture and stir until smooth. Slowly add the flour and sugar mixture. Mix until well combined.
Spray and flour a 6 cup jumbo muffin tin. Divide the batter evenly between the muffin cups. Bake at 425 degrees for about 10-12 minutes. Cool for about 5 minutes and invert onto a plate. Sprinkle with confectioners’ sugar and dig in. Serve warm.
