Every now and then, I commit the ultimate food bloggers sin and I use a boxed cake mix. What can I say? They are are quite handy every now and then. And this case, it is totally worth it because they are delicious in every way. You don’t even have to admit to anyone that they came from a box. Just tell them that you slaved all day. They honestly won’t be able to tell the difference.

Red Velvet Cookie Sandwiches
makes about 2 dozen cookies, or a dozen cookie sandwiches
1 Red Velvet Boxed Cake Mix
6 tablespoons butter, melted and cooled
zest from 1 small lemon
Mix all ingredients until well blended. (I live in a pretty high altitude so I added about a 1/4 cup of all purpose flour to make the dough a little less sticky) Scoop onto a baking sheet lined with parchment paper and bake at 375 degrees for about 12 minutes or until the cookies are set.
Normally I like to under bake my cookies because I like them gooey, but you won’t want to under bake these ones. Cook them through until they are no longer doughy.
Cream Cheese Filling
4 ounces cream cheese, at room temperature
4 tablespoons butter, at room temperature
3 cups confectioners’ sugar
1 teaspoon vanilla extract
1-2 tablespoons milk (more or less)
Cream until smooth and creamy. Scoop a nice amount onto the bottom of a cookie and place another cookie on the frosting to make a sandwich. Enjoy!
