Peanut Butter Rice Krispy Treat Cookies

Hey guys! Happy Tuesday! I know I know, these cookies sound wicked.  And they kind of are.  If you want to feel like a kid again, make these cookies.  They are amazing.  I love love love rice krispy treats.  And these are my version of them as a cookie. Peanut Butter-y, marshmallow-y, rice krispy, chocolate-y goodness fill these cookies and the flavor combination doesn’t get much better than this!  Give em a try and I dare you NOT to eat the whole batch!

Peanut Butter Rice Krispy Treat Cookies
recipe makes about 3 dozen

2 1/4 cups all purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, at room temperature
1/2 cup peanut butter
1/2 cup sugar
3/4 cups brown sugar
2 eggs
1 teaspoon vanilla extract
1 3.4 ounce pkg vanilla instant pudding mix
1 1/2 cups miniature marshmallows
1 cup mini semi sweet chocolate chips
2 cups Rice Krispy Cereal

In a medium bowl whisk together the flour, baking soda and salt. Set aside. Using a mixer, cream the butter, peanut butter and sugars. Add the eggs and vanilla and mix until creamy. Add the vanilla pudding mix. Slowly add the flour mixture and mix just until combined. Add the marshmallows and chocolate chips. Stir in the cereal by hand. Scoop onto a baking sheet lined with parchment paper (this is very important or you will never get the melted marshmallows off of your pan). Bake at 350 degrees for about 10-12 minutes or until lightly golden. Do NOT overbake. Best when warm.

Red Velvet Cookie Sandwiches

If you are looking for a quick and sweet Valentines Day treat, look no further.  These are amazingly perfect.

Every now and then, I commit the ultimate food bloggers sin and I use a boxed cake mix.  What can I say? They are are quite handy every now and then.  And this case, it is totally worth it because they are delicious in every way. You don’t even have to admit to anyone that they came from a box.  Just tell them that you slaved all day.  They honestly won’t be able to tell the difference.

Red Velvet Cookie Sandwiches

makes about 2 dozen cookies, or a dozen cookie sandwiches

1 Red Velvet Boxed Cake Mix
6 tablespoons butter, melted and cooled
2 eggs
zest from 1 small lemon

Mix all ingredients until well blended. (I live in a pretty high altitude so I added about a 1/4 cup of all purpose flour to make the dough a little less sticky) Scoop onto a baking sheet lined with parchment paper and bake at 375 degrees for about 12 minutes or until the cookies are set.

Normally I like to under bake my cookies because I like them gooey, but you won’t want to under bake these ones. Cook them through until they are no longer doughy.

Cream Cheese Filling

4 ounces cream cheese, at room temperature
4 tablespoons butter, at room temperature
3 cups confectioners’ sugar
1 teaspoon vanilla extract
1-2 tablespoons milk (more or less)

Cream until smooth and creamy. Scoop a nice amount onto the bottom of a cookie and place another cookie on the frosting to make a sandwich. Enjoy!

Chocolate Chip Pudding Cookies

I’ve been cleaning up my blog for the past week.  I don’t know if you noticed but most of my pictures were disabled so I’ve had to go and manually enter them back into each seperate post.  A lot of work, but very worth it of course.

I have had a lot of people ask me where this recipe is in my blog.  These are a favorite around here and in my neighborhood.  I thought I had posted it, but it is no where to be found. So here you go friends of mine.  The Chocolate Chip Pudding Cookie recipe that ya’ll have been dying to have.

Chocolate Chip Pudding Cookies
recipe make about 3 dozen

2 1/4 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cups butter, at room temperature
1/2 cup granulated sugar
1 cup brown sugar
1 teaspoon vanilla
2 eggs
1 3.9 ounce pkg instant vanilla pudding mix
2 cups chocolate chips

In a medium bowl, whisk together the flour, baking soda and salt. Set aside. Using a mixer, cream the butter and sugars until light and fluffy. Add eggs and vanilla and blend well. Add the pudding mix and mix until creamy and smooth. Make sure to use your spatula and scrape down the sides of the bowl often. Slowly add the dry ingredients just until blended. Fold in the chocolate chips. Bake at 350 degrees for about 8-10 minutes or just until light and golden. Do not over bake.

If you really want to go a little crazy, add in some crushed Oreo’s. My absolute favorite flavor ever.

Lemon Cream Cookies

I was a little bit crazy and took on a big baking project for a church function last night.  I decided to do a cookie bar.  I totally could have called a couple of people and had some help but instead, because I am insane, I baked up 6 different kinds of cookies, 2 dozen each.  These babies were definitely star of the show.  They are almost embarrassingly (is that a word) simple and just a warning, they do contain a boxed cake mix.  So if that is against your religion, feel free to turn this off now.  ;)  These cookies melt in your mouth.  The fresh lemon juice and zest really make these pop.  Love em’!

Lemon Cream Cookies
makes about 2 1/2 dozen

1 box lemon cake mix
1 large egg
zest and juice from 1 large lemon
1 8 ounce container cool whip
confectioners’ sugar

Mix the cake mix, egg and the lemon zest and juice until evenly distributed. The batter will be crumbly. Fold in the cool whip until well combined. It will be sticky. Chill in the fridge for 1 hour. Scoop the batter into desired size and roll in the confectioners’ sugar. Place on a cookie sheet lined with parchment paper and bake at 350 degrees for 8-10 minutes or until lightly golden.

Death by Chocolate Chocolate Cookies

Do me a favor.  Print this recipe off.  Go into your kitchen.  Make these cookies now.  No need to thank me.  Or maybe you will curse me after you’ve eaten a dozen like I have.  This is one of those recipes that came from just needing to bake.  I didn’t know what I wanted to bake, I just knew I had to or I would do something drastic like vacuum or something. No really, I was deciding if I should vacuum my floors or bake cookies.  So I went to work.  Yum.  You can take these cookies to whatever level you want.  Throw some Andes Mints in there, or any favorite candy bar for that matter.  Throw some nuts or peanut butter chips if that is what you fancy.  Be creative or keep it simple like I did.  Chocolate and more chocolate.

Death by Chocolate Chocolate Cookies

1/3 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cups butter, softened
1/2 cup granulated sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1 3.9 oz package instant chocolate pudding mix
2 cups of mix-ins (I used 1 cup of milk chocolate chips and 1 cup of semi-sweet chips)

In a medium bowl, whisk together the flour, cocoa, baking soda and salt. Set aside. Using a mixer, cream the butter and sugars. Add the eggs one at a time until well incorporated. Be sure to scrape the sides of the bowl often. Add the vanilla and pudding mix. Slowly add the dry ingredients just until combined. Stir in your choice of mix-ins. Bake at 350 degrees for about 10-12 minutes. Don’t over bake.
